Miguel started his love affair with paella as a teenager when his beloved uncle taught him the secrets of the dish. Cooking Paella is a combination of different small touches of different ingredients here and there in a special way, and at the end it all comes together into this amazing dish...

Miguel Cuevas and Bruno Laborde

Bringing a shared passion for paella and authentic Spanish food, together they are the inspiration behind Flavours of Spain.

Miguel, our founder, head chef and Spanish Paella Ambassador to Australia, is considered one of the best paella chefs in the world. Miguel grew up in the Spanish countryside in a region famous for its gastronomic delicacies and earthy dishes. His passion for food and quality ingredients started early in life, as his family’s tradition was producing their own small goods, chorizo, black pudding, jam and cider. This passion continues today and Miguel has instilled in us his love of premium ingredients, along with how to cook with care and excitement, which is what makes our paellas so special.

Bruno, owner and customer service manager, has a keen eye for detail and commitment to excellence. Born and raised in the Basque Country, which sits between France and Spain, he grew up with a deep appreciation for food and honouring cultural heritage.  This continues through his work with us today.

Miguel and Bruno have over 30 years of hospitality experience between them and their commitment to quality and authenticity is unrivaled. There are many caterers offering Spanish cuisine in Sydney, but few are as passionate about respecting tradition and delivering unique and culturally enriching events to their customers.
